Summer Pavlova Rocky Road

Crispy meringue, ooey gooey marshmallow and sweet yet tangy passionfruit with mango all engulfed in white chocolate, our Summer Pavlova Rocky Road is one to savour. We created this recipe to capture the essence of Summer with a boost of gut-friendly ingredients. Yep, the pistachios, macadamias and dried mango are all full of fibre and prebiotics to nourish your gut bugs. This recipe is proof that festive delights can be both delicious and nutritious.

Ingredients

  • 250g white chocolate

  • 100g Caramilk chocolate

  • 1 tablespoon melted coconut oil

  • 100g dried mango, finely chopped

  • ⅓ cup macadamia nuts, chopped

  • ⅓ cup pistachio nuts, chopped

  • 1 cup white marshmallows, chopped

  • 1 cup meringues, chopped

  • 1 passionfruit

Method

  1. Break up the chocolate and mix together with the coconut oil in a microwave safe bowl. Microwave for 90 seconds and stir. Microwave in further 10 second intervals as needed until melted.

  2. In a separate bowl, mix together the remaining ingredients (except passionfruit) until well combined.

  3. Cover ingredients in melted white chocolate until coated.

  4. Pour onto a lined baking tray and drizzle with passionfruit pulp.

  5. Place in the fridge until set.

  6. Cut into preferred sized pieces and serve.

  7. Store in an airtight container in the fridge.
