This strawberry packed jam is high in fibre and a rich source of antioxidants. It’s versatile and can be enjoyed in many ways. Our favourite serving suggestions?
Stir a spoonful into natural greek yogurt for a delicious snack
Mix through your morning oats for extra sweetness
Serve with peanut butter or ricotta on wholegrain toast
Recipe: Serves 6-12
Ingredients:
4 cups fresh strawberries, chopped
1 tbsp maple syrup or honey
½ lemon, juiced
⅓ cup chia seeds
Method:
Add chopped strawberries to a small saucepan over a medium heat
Add the lemon juice and cook until the strawberries become soft and easily break down (~10min)
Add the maple syrup and mix evenly
Remove from heat and break down strawberries using a potato mashed until your desired texture
Add the chia seeds and stir through until mixed evenly
Leave to cool before transferring to an airtight jar and store in the fridge.
