ONE POT WONDER - CHILLI CON CARNE

Love cooking but hate the clean up that comes with it?


This one-pot wonder ticks all the boxes nutritionally being a great source of iron, high in fibre and protein and the best part - you only have one dish to clean!

Recipe: Serves 4-6

Prep time: 15 minutes
Cook time: 25 minutes

Ingredients:

  • 1 teaspoon olive oil

  • 3 cloves garlic, minced

  • 1 onion, finely diced

  • 1 red capsicum,  finely diced

  • 2 celery stalks, finely diced

  • 2 carrots, finely diced

  • 500g lean beef mince

  • 3 tablespoons tomato paste

  • 800g canned crushed tomatoes

  • 400g kidney beans, drained and rinsed

  • ¾ cup water

Spices:

  • ½ teaspoon cayenne pepper

  • 2  teaspoons smoked paprika

  • 2  teaspoons hot paprika

  • 4 teaspoons cumin powder

  • 2 teaspoons oregano

Guacamole and grated cheese to serve

Method:

  1. In a large pot, heat oil over medium to high heat.

  2. Add garlic and onion, cook for 1 minute. Add capsicum, celery and carrots and cook until softened (approximately 3 minutes).

  3. Add mince and using a wooden spoon break apart the mince until it is almost browned.

  4. Combine spices and add to the beef mixture. 

  5. Add remaining ingredients. Bring to the beef mixture to simmer then reduce heat to medium-low. Cook, uncovered until sauce has thickened. 

  6. Serve with optional toppings and enjoy :)
