HEARTY HOMEMADE Baked Beans

RECIPE: Serves 4

INGREDIENTS:

1 tbsp extra virgin olive oil

1 brown onion

2 cloves of garlic, crushed

2 celery stalks, chopped

1 red capsicum, chopped

1 carrot, grated

1 tin cannellini beans

1 tbsp tomato paste

1 tin crushed tomatoes

2 tsp smoked paprika

1 bunch fresh parsley


METHOD:

  1. Preheat the oven to 180°C.

  2. Add olive oil in a large pan over a medium high heat. Add the onion, garlic, celery, capsicum and carrot and cook, stirring for a few minutes until soft.

  3. Add the cannellini beans, smoked paprika, tomato paste and crushed tomatoes, stir to combine.

  4. Pour the bean mixture to a medium baking dish and bake for 15 minutes. TIP: For a quick option, skip this step and eat beans straight from the pan (technically not baked beans but still delicious).

  5. Once the sauce has thickened, remove the beans from oven and top with fresh parsley to serve.
