Prebiotic Muesli Bars

Our Prebiotic Muesli Bars will have you smiling, and not just because they taste delicious. We filled these with a jaw-dropping nine different plant foods (yes, cocoa counts as one!) and cherry-picked those which are also prebiotics. These all feed your healthy gut microbes, who then produce chemical messenger “by products” that boost mood and reduce anxiety, stress and depression. We’re smiling just reading that.

Makes 12

Ingredients: 

  • ⅓ cup almonds

  • ⅓ cup pistachios 

  • ⅓ cup hazelnuts

  • ½ cup uncooked tricolour quinoa 

  • 15 medjool dates, pitted 

  • 2 tbs honey 

  • 2 tbs cocoa powder

  • ¼ cup chia seeds

  • ½ cup sunflower seeds

  • 5 tbs extra-virgin olive oil (light flavour) or coconut oil

  • ¼ cup of 70% dark chocolate, chopped

  • ¼ cup dried cranberries




Method: 

  1. In a food processor, add almonds, pistachios, hazelnuts, pumpkin seeds, sunflower seeds and chia seeds. Pulse a few times until roughly chopped. Set aside

  2. Add dates, honey, oil and cocoa powder and process until a paste forms. If needed, add some water to help form a smooth consistency.

  3. Combine date and nut mixture along with quinoa, cranberries and chocolate bits. 

  4. Press into a lined baking tray. Refrigerate for 60 minutes 

  5. Cut into bars and store in fridge or freezer
