HIGH PROTEIN FRITTATA

Need something that is going to keep you satisfied throughout the morning and keep your performance sharp?

Why not try out this delicious High Protein Frittata. Makes for a delicious and satisfying breakfast or a quick and easy lunch option.

Recipe: Serves 1

Ingredients:

1 tbsp extra virgin olive oil
2 eggs
2 tablespoons milk
½ cup cottage cheese
1 clove garlic, minced
5 button mushrooms, sliced
1 handful baby spinach, roughly chopped
30 g roasted pinenuts
1-2 chives, roughly chopped

Method:

  1. Preheat oven to 180 degrees grill setting.

  2. Add eggs,  milk, cottage cheese to a mixing bowl. Season with salt and pepper and whisk to combine. 

  3. Heat 1 tablespoon of olive oil in a small frying pan over medium heat. Add garlic and cook for 20 seconds then add mushrooms. Cover with lid and allow to cook for around 4 minutes. 

  4. Remove lid and lower heat to medium-low cooking until water is evaporated. 

  5. Add baby spinach leaves and stir through for 1 minute until wilted. 

  6. Spread mushroom spinach mixture evenly across the base of the pan and then pour egg mixture over the top. Sprinkle with chives and pinenuts.

  7. Sprinkle with chives and pinenuts and then cook under the grill for a further 5 minutes until cooked through.

  8. Serve with a slice of toast for a satisfying breakfast or side salad for a light lunch.
