Tofu Rice Paper Rolls

Delicious, crunchy yet chewy and packed with flavour, these tofu rice paper rolls are a winner. In light of Gut Health Month this February, we have stuffed these rolls with gut-friendly ingredients to keep your digestive health in tip top shape. Tofu is not only great source of plant-based protein but also fibre, the key nutrient for maintaining regular bowel movements and a healthy digestive system. Meanwhile, mushrooms, cabbage, onion and garlic are rich sources of prebiotics which feed the healthy bacteria living in our gut. So go ahead and enjoy our tasty Dietitian twist on rice paper rolls and give your gut the love and nourishment it deserves with every bite.

Serves 4

Ingredients: 

  • 12 rice paper sheets

  • 200g firm tofu

  • 200g mushrooms

  • 2 small carrots

  • ¼ green cabbage

  • 2 spring onions

  • 4 garlic cloves, minced

  • 2 tbsp salt-reduced soy sauce 

  • 1 tsp sesame oil

  • Extra virgin olive oil

  • Sesame seeds (optional)

Method: 

  1. Finely grate or shred the carrots, cabbage and tofu. Dice the mushrooms and onions.

  2. Heat a large pan and saute the garlic with extra virgin olive oil until translucent. Add the tofu and continuing cooking. Once browned add the carrot, cabbage, mushrooms, sesame oil and soy sauce and continuing cooking until tender.

  3. Stir in the chopped onion and remove the mixture from the heat. 

  4. Set up a rolling station with a large plate of water and a damp tea towel to roll your rice paper on. 

  5. Dip a rice paper sheet in the water for a few seconds and place it on the damp tea towel. Add a spoonful of the filling in the center of the rice paper roll. Fold in the sides, and tightly roll from the bottom to the top, making sure to tuck in the filling as you go

  6. Repeat step 5 for the remaining filling and wrappers.

  7. Garnish with sesame seeds (if using) and serve with your choice of dipping sauce (e.g. sweet chilli sauce, hoisin sauce)
