Gut Health Boosting Burrito Bowl
With over eight plant-based points for diversity, this Mexican-inspired dish will definitely keep your healthy gut bugs happy. Full of fibre and plenty of flavour, this will soon become a family favourite for ‘Friday Fiesta ‘ nights at home.
Serves 4-6
Ingredients:
- 500g lean beef or pork mince 
- 1 tbsp Smoked Paprika 
- 1 tbsp garlic powder 
- 1 tin black beans 
- 1 tin corn, drained and rinsed 
- 1 red onion, chopped 
- 1 red capsicum, chopped 
- 2 fresh tomato, chopped 
- ½ bunch fresh coriander, chopped 
- Extra virgin olive oil 
- 1 Avocado 
- Lime juice 
- Basmati rice 
Method:
- Cook the rice according to the instructions on the packet. Set aside. 
- Heat a large fry pan over medium heat. Add 1 tbsp olive oil and cook mince for 1-2 minutes. Add in the paprika and garlic seasoning and continue cooking until golden brown and cooked through. Add the black beans and stir for a further 1-2 minutes until heated. 
- Head a second large frying pan, add 1 tbsp olive oil and cook the red onion, capsicum and corn until charred. 
- To make the guacamole - In a separate bowl, add the avocado and ½ lime juice (chilli flakes optional). 
- To assemble, place rice, meat/bean mix and vegetables in a bowl (see image). Top with fresh tomato, coriander and guacamole. Add extra lime if desired. Enjoy!
