Quick Mexican Quesadillas

Need a quick lunch or dinner which doesn’t compromise on taste? These easy Mexican Quesadillas are a simple go-to when in you’re in a pinch. The canned black beans are a convenient and budget friendly source of protein and fibre which keep this recipe filling and satisfying. Feel free customise your quesadillas with any vegetables you have on hand. Or, add a fun dip on the side to dunk your quesadillas into such as guacamole, hummus or salsa. Enjoy!

Serves 4

Ingredients

  • 4 whole grain wraps 

  • 1x 400g can black beans

  • 1x 400g can corn

  • ½ red onion or 1 spring onion, finely chopped

  • 200g light tasty cheese, grated


Method

  1. In a bowl, lightly mash the black beans. Add the corn and onion and mix. 

  2. Lay out the wraps and spread a quarter of bean mixture across half of each wrap, leaving some space around the edge. 

  3. Sprinkle the cheese evenly on top of each wrap and fold over to form a half moon shape. 

  4. Toast in a sandwich press or dry fry on a pan until golden brown and the cheese has melted. If using a pan, flip halfway during cooking.

  5. Cut into quarters and serve with a side salad and your choice of dip (e.g. hummus, guacamole, salsa)
