Crispy Roasted Chickpeas

Roasted chickpeas tick all the boxes when it comes to healthy, tasty and sustainable eating habits. They are easy to make, budget-friendly, full of fibre, plant-based protein, gut-loving prebiotics and iron and most importantly, delicious! With just over four grams of fibre per serve, crank your oven and put those canned chickpeas in your pantry to use with our simple recipe.

Serves 4 (as a snack)

Ingredients:

  • 1x 400g can chickpeas, drained and rinsed

  • 1 tbsp extra virgin olive oil

  • 1 tsp of your favourite spice (e.g. paprika, cumin, chilli, garlic or onion powder)

Method:

  1. Preheat the oven to 180°C.

  2. Evenly spread the chickpeas in a single layer on a baking tray lined with banking paper.

  3. Bake for 30 minutes in the oven, checking and turning every now and then. 

  4. Remove the chickpeas and carefully add them to a bowl with the olive oil and your choice of spice. Toss well to cover the chickpeas evenly. 

  5. Place back on the baking tray and return to the oven for another 10 minutes until golden and crispy. 

  6. Enjoy them warm or wait for them to cool.

Tips:

  • Completely cool and store the chickpeas in an airtight container in the pantry for up to 1 week

  • Enjoy as a snack or use as a crunchy garnish for salads, toasts, stir-fries and more!

  • Take a sweet twist and season with cinnamon and vanilla extract or powder
