Lemon and Herb Fish Skewers

Do you need a simple holiday recipe that bursts flavour and nutrition? Look no further than our easy fish skewers that marry zesty lemon with the perfect concoction of herbs. We chose barramundi and salmon for their winning omega 3 fat content. Not only delicious, these skewers will benefit your heart health, reduce inflammation and boost your mood - happy summer cooking!

Serves 4

Ingredients: 

  • 400g boneless and skinless barramundi, cut into chunks

  • 400g boneless and skinless salmon, cut into chunks

  • 8 raw prawns 

  • 8 bay leaves

  • 2 tbsp extra virgin olive oil

  • 2 tbsp garlic powder

  • 2 lemons, juiced

  • 1 tsp dill, finely chopped

  • 1 tbsp parsley, finely chopped

  • Salt and pepper, to taste 

  • Wooden skewers

Method: 

  1. Mix the olive oil, lemon juice, garlic powder, dill and parsley in a large bowl. Add the salmon, barramundi and prawns and stir well to coat. Marinate in the fridge for one hour.

  2. Soak the four wooden skewers in water (to prevent burning). Preheat the barbeque.

  3. Thread two pieces of barramundi, two pieces of salmon, two prawns and two bay leaves onto each wooden skewer. 

  4. Cook on the barbecue for 8 to 10 minutes or until the fish and prawns are cooked. Turn regularly to ensure everything is cooked through.

  5. Remove from the barbecue, garnish with the lemon juice and serve with your favourite summer vegetables or salad.
