Zucchini Lupin Fritters

These fritters are very versatile - they can be prepped in advance and used as a quick and easy breakfast on the go, a simple working from home lunch or even a satisfying snack. In this recipe, we experimented with swapping regular flour with Lupin flour. This provides a nutritional boost by increasing the protein content by more than 4x and boosting the fibre by more than 15x compared to regular flour!

Serves 4-6

Ingredients: 

  • 1 Tbsp Extra Virgin Olive Oil

  • 1 large carrot, grated

  • 1 large zucchini, grated (squeeze out moisture)

  • 1 cup spinach, chopped

  • 1 garlic clove

  • ½ cup milk 

  • 2 whole eggs

  • 1 cup lupin flour (or your flour of choice)

  • 1 cup cottage or ricotta cheese

Method: 

  1. Whisk together milk and eggs until well mixed. Gradually whisk in the flour to the wet mixture, stirring together until well combined and a smooth batter forms.

  2. Add in the grated zucchini, carrot, spinach, garlic and cheese and stir until well combined.

  3. Place a large frypan on medium heat. Add the olive oil to coat the base of the pan. Add ¼ cup full of the mixture at a time to the fry pan, and cook each fritter for 2-3 minutes on each side. 

  4. Serve with a salad of choice - we love using cherry tomatoes for a quick simple salad.
